Beef & Haloumi Salad

Prep Time: 5 mins Cook Time: 10 mins

INGREDIENTS

800g Beef Rump Steak Strips
4 Field Mushrooms
2 Red Capsicums, seeded, cut into wide strips
1/4 cup Olive Oil
150g Haloumi, cut crossways into 12 slices
100g Baby Rocket
1 cup Basil Leaves
2 tbsp Extra Virgin Olive Oil
1 Small Red Chilli, finely sliced


DIRECTIONS

STEP 1: Preheat a char-grill or barbecue to high heat.

STEP 2: Brush steak, mushrooms and capsicum with olive oil and season with salt and pepper.

STEP 3: Cook beef for 2 mins each side for medium rare, or until cooked to your liking. Remove from heat and set aside to rest for 10 mins.

STEP 4: Cook mushrooms and capsicum for 2-3 mins each side, until cooked. Cook haloumi for 1 min each side, until golden.

STEP 5: Slice beef and mushrooms thickly.

STEP 6: Toss together rocket and basil in a bowl.

STEP 7: Combine extra virgin olive oil and chilli and drizzle three-quarters of it over rocket mixture.

STEP 8: Place in a serving dish and top with beef, mushrooms, capsicum and haloumi. Drizzle with remaining oil and chilli and serve.
