Burrito Bake

INGREDIENTS

2 packs enchilada sauce mix
3 cups water
2 340g tomato paste
1 garlic clove, minced
900g beef mince
9 large flour tortillas (9-inch)
4 cups shredded cheddar cheese
1 can refried beans, warmed
1/4 tsp pepper
Salt to taste
Taco sauce, sour cream, chili peppers, chopped onion and/or guacamole, optional


DIRECTIONS

STEP 1: In a saucepan, combine the first six ingredients; simmer for 15-20 minutes.

STEP 2: In a pan, brown the beef. Drain; stir in one third of the sauce. Spread another third on the bottom of a greased 13x9 inch baking pan.

STEP 3: Place three tortillas over sauce, tearing to fit bottom of pan.

STEP 4: Spoon half of the meat mixture over tortillas; sprinkle with 1-1/2 cups cheese.

STEP 5: Add three more tortillas. Spread refried beans over tortillas; top with remaining meat. Sprinkle with 1-1/2 cups of cheese.

STEP 6: Layer remaining tortillas; top with the remaining sauce. Sprinkle with remaining cheese.

STEP 7: Bake, uncovered, at 180 degrees for 35-40 minutes. Let stand 10 minutes before cutting.

STEP 8: Serve with taco sauce, sour cream, chilli peppers, chopped onion, and/or guacamole if desired. Makes 8-10 servings.
