Cheese Stuffed Meatballs

INGREDIENTS
1kg lean beef mince
1/2 cup packaged breadcrumbs
2 tsp dried Italian herbs
4 garlic cloves, crushed
1 Egg, lightly beaten
220g cherry bocconcini
2 tbsp olive oil
700g tomato & garlic pasta sauce
500g spaghetti
Parmesan, grated, to serve
Basil leaves, to serve
DIRECTIONS
STEP 1: Combine the mince, breadcrumbs, herbs, garlic and egg in a large bowl. Season.
STEP 2: Shape 2 tablespoons beef mixture around each bocconcini to enclose.
STEP 3: Heat the oil in a large saucepan on medium-high heat. Cook meatballs, turning, for 5 minutes or until browned all over.
STEP 4: Add the pasta sauce and bring to a simmer. Simmer, covered, for 7 minutes or until meatballs are cooked through.
STEP 5: Meanwhile, cook the pasta in a large saucepan of boiling salted water until al dente. Drain.
STEP 6: Serve pasta topped with meatballs, parmesan and basil.
