Mexican Lasagne

INGREDIENTS
500g beef mince
Pack of 6 tortillas
425g tin crushed tomatoes
Packet of taco seasoning
425g tin kidney beans
Carton light sour cream
Mild salsa
1 cup grated cheese
1 ripe avocado
1 lemon
1/2 tspn curry powder
DIRECTIONS
STEP 1: Preheat oven to 180 degrees.
STEP 2: Brown mince and add taco seasoning.
STEP 3: Add rinsed and drained kidney beans and can of tomatoes.
STEP 4: Allow to simmer for 10 minutes.
STEP 5: Put 2 x tortillas into the bottom of a greased baking dish ensuring they cover the bottom.
STEP 6: Pour half of the mince mixture on top.
STEP 7: Place two more tortillas on top then cover with the remaining mince.
STEP 8: Put the final 2 tortillas on top and cover with sour cream then grated cheese.
STEP 9: Put in the oven for 30 minutes or until golden brown on top.
STEP 10: Mash the avocado, add half a tspn of curry powder and a splash of lemon juice to taste.
STEP 11: Remove from oven and serve with a bit of the salsa, sour cream and avocado on top.
