Moroccan Chicken

INGREDIENTS
1⁄2 cup extra virgin olive oil
1⁄4 cup chopped shallots
1⁄4 cup chopped parsley
1⁄4 cup chopped fresh coriander
1 tbsp minced garlic
2 tsp paprika
2 tsp ground cumin
1 tsp salt
1⁄4 tsp turmeric
1⁄4 tsp cayenne pepper
4 boneless skinless chicken breasts
DIRECTIONS
STEP 1: Combine oil, shallots, parsley, coriander, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor.
STEP 2: Process until smooth.
STEP 3: Rub the mixture on both sides of the chicken breasts and let stand 30 minutes.
STEP 4: Preheat the grill to medium hot.
STEP 5: Grill chicken breasts 5-7 minutes on each side, or until done.
Serving suggestion: Serve with rice, couscous or a green salad.
