Baked Pork Loin Steaks with Pears & Blue Cheese

Prep time: 20 mins/Cook time: 30 mins

INGREDIENTS

4 Pork Loin Steaks
3 Small Pears
1 Onion
2 Capsicums (Any colour)
600g Sweet Potatoes
100g Blue Cheese
1 tsp Dried Thyme
Salt and Black Pepper
Sunflower Oil


DIRECTIONS

STEP 1: Preheat the oven to 200˚C

STEP 2: Cut the onion in half, discard the skin and slice thickly.

STEP 3: In a large frying pan brown the pork steaks in a little oil then transfer to a roasting tray.

STEP 4: Quickly fry the onions in the same pan to brown them.

STEP 5: Put the onions around the pork steaks, season with a little salt, black pepper and the dried thyme.

STEP 6: Cook in the oven for 15 minutes.

STEP 7: Meanwhile cut the pears into quarters and remove the pips, add these to the roasting dish and cook another 10 minutes.

STEP 8: Peel the sweet potatoes and cut into 2cm chunks, cut the peppers into the same size, discard any pith or seeds.

STEP 9: Saute them in a little oil in the frying pan for about 10 minutes until browned and cooked through.

STEP 10: Crumble the Blue Cheese over the pork steaks in the roasting dish and return to the oven for 5 minutes to melt.

STEP 11: Serve the sweet potato saute alongside the baked pork steaks.
