Lemon, Garlic & Oregano Kebabs

INGREDIENTS
1/3 cup lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon dried oregano
2 garlic cloves, crushed
1kg lamb leg steaks, cut into kebab style pieces
6 tomatoes, roughly chopped
1 red onion, cut into wedges
1 1/4 cups continental parsley leaves
100g Greek feta, crumbled
Lemon wedges (optional)
Lebanese bread (optional)

DIRECTIONS
STEP 1: Combine lemon juice, oil, oregano and garlic in a flat bottom glass or ceramic dish. Push lamb onto kebab skewers. Add to marinade and turn to coat. Cover and place in fridge for 4 hours to marinate.
STEP 2: Preheat a chargrill or BBQ on medium-high. Add half the lamb and cook for 4-5 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil to keep warm. Repeat the process with remaining lamb.
STEP 3: Combine tomato, onion, parsley and feta in a bowl and serve as a side. Can be served with lemon wedges and bread.
