Lamb & Sweet Potato Pie

Cook Time: 1 Hour

INGREDIENTS

1 sweet potato peeled diced
1 tbs olive oil
1/2 tsp garlic
500 g lamb mince
2 tsp fresh rosemary
1/2 tsp mint
29 g instant gravy powder
150 ml cold water
2 sheets puff pastry
1 tbsp milk

 


DIRECTIONS

STEP 1: Preheat oven to 180C.

STEP 2: Microwave the sweet potato for a few minutes to soften.

STEP 3: In a large pan, heat the oil. Add the garlic and mix in the sweet potato with salt and pepper to season.

STEP 4: Fry for a few minutes, turning regularly.

STEP 5: Add lamb and stir through, adding rosemary and mint whilst browning.

STEP 6: Gradually add the gravy mix and combine.

STEP 7: Remove from heat.

STEP 8: Grease two small pie dishes and line with pastry.

STEP 9: Fill with meat mixture and top with remaining pastry. Brush with milk.

STEP 10: Bake for 35-40 minutes until golden brown.
