Mint Sauce (for lamb chops)

INGREDIENTS
125ml (1/2 cup) malt vinegar
2 tablespoons brown sugar
1 tablespoon water
1 cup firmly packed fresh mint leaves, finely chopped
Salt & freshly ground black pepper
DIRECTIONS
STEP 1: Combine the vinegar, sugar and water in a small saucepan and bring to the boil over medium heat.
STEP 2: Add the mint. Taste and season with salt and pepper.
