Mushroom Gravy

INGREDIENTS
2 tablespoons olive oil
100g button mushrooms, thinly sliced
1 clove garlic, crushed
1 1/2 tablespoons plain flour
1 1/4 cups (310ml) beef stock, approximately
DIRECTIONS
STEP 1: Heat oil in a medium frying pan over medium heat. Add mushrooms and garlic. Cook, stirring for 3 minutes or until lightly browned. Add flour. Cook, stirring for 1 minute.
STEP 2: Slowly add stock, 1/4 cup at a time, stirring constantly to prevent lumps forming. Cook, stirring for 3 minutes or until sauce boils and thickens. Season with salt and pepper. Adjust liquid quantity to achieve the consistency you require.
