Carribean Chicken

Total Prep Time: 5mins  Cook Time: 45mins

INGREDIENTS

½ cup plain flour
1 teaspoon curry powder
½ teaspoon ground cinnamon
½ teaspoon sweet paprika
1 tablespoon olive oil
15g butter
500g chicken breast - cut into large chunks
500g sweet potato, peeled, chopped
440g can pineapple pieces with natural juice, drained
400g can cream chicken soup
1 cup chicken stock
½ cup orange juice
coriander leaves, crusty bread, to serve


DIRECTIONS

STEP 1: In a shallow bowl, mix flour and spices together. Season to taste. Dust chicken in flour mixture, shaking off excess.

STEP 2: Heat oil and butter together in a large heavy-based saucepan on high. Brown chicken 8-10 minutes, turning.

STEP 3: Add sweet potato, pineapple, soup, stock and juice. Bring to boil. Reduce heat to medium. Simmer, uncovered, 30-35 minutes, until sweet potato is tender and chicken is cooked through.

STEP 4: Sprinkle with coriander leaves as desired.
